Trained by SA top Executive Chefs Garth Stroebel and Paul Hartmann. Chef Byron’s résumé includes: a degree in Culinary Arts in artisan pastry making, nouvelle and de-constructive cuisine in both London and South Africa. He has established Kitchens in some of the top hotels in Africa, cooked on the African Food Channel and been Personal Chef to local and international Celebrities. Chef Byron has transformed onset catering by bringing creative and modern cooking methods from French style to Portuguese cuisine influenced by his Mozambican routes.

After working as team leader for some of SA's top Commercial and Film Production houses James joined SheSha. His warmth and level headedness is an asset not only to us but our clients too. His new logistical tactics are constantly fulfilled before and after every production to ensure that awesome satisfaction is maintained.

SHEDRIN MOMBERG

Our Third Musketeer, Shedrin runs all PR, advertising, new business and client relationship managemet. His experience working all over the U.K. as bar management to Chef de cuisine, a Culinary Qualification coupled with his knowledge of client management has made him an asset within our business.

 

Executive Sous Chef

Alcides Cristovao

Chef Alcides, all the way from Angola displays his art in Tuscan style cookery with his invention of "al fresco African fusion". Sous Chef at the famous Tuscany Beach, Chef Byron and Chef Alcides paired up and ran the 350-seater restaurant. His precision and detail with each dish has seen smiles on over 500 happy cast and crew on any given set.

 

logistics & operations

 

SheSha currently runs 4 teams, each team with a crew management of 150 – 500 pax.  We run our own fleet of vehicles with 2 mobile kitchen units, each unit has a brigade of Sous chef - Head to chef de partie. Both Catering and Craft teams consist of highly trained team leaders and on site managers. Our on set teams have a hip semi smart dress code in black shirts, fedoras & our signature yellow ties.  

 

We provide marquee setups and separate unit stations for both base camp and on set catering and craft units. We are fully equipped with all gas run appliances and have our own generators for the Craft and buffet stations.

 

Our mobile Craft units have Ezee shades and portable Brazilian coffee machines to ensure the crew and clients are well looked after every moment of the shoot.

 

Food safety and health: All our staff are certified and have all been trained in compliance with gas and food usages as well as basic medical aid and food safety procedures.

 

Keeping it Green: We have coded bins for waste which is kept

separately and recycled. All our products are biodegradable and

eco-friendly on set.
